You take a table, make an order to the waiter, wait, eat and pay – this is the scheme, which is already more than a hundred years people are served in most restaurants. This scheme seems to be approved and immutable, but the creators of the project Interactive Restaurant Technology fundamentally disagree with this.

Since the launch of the project in 2011, three restaurants using IRT technology have already opened in Cyprus, Dubai and Abu Dhabi. Several new restaurants are already under construction in Europe, North America and Asia. The Ukrainian project has also become a resident of the Microsoft BizSpark program.

Briefly about technology and features.
In establishments using IRT technology, customers sit at large interactive tables, make orders, shop online and communicate with other customers. Even the interior of the restaurant can change, because any image can be displayed on the touch screens.
Despite the significant amount of investment, the two restaurants opened by Interactive Restaurant Technology have already paid off. And IRT itself, founded just four years ago, is already valued at tens of millions of dollars.

Technical realization
The technology that is now used in the Microsoft Surface or the iPad cannot be used in restaurants. Firstly, it is impossible to make such a panel larger than 23-30 inches. And this limitation is not a production, and physical: such screens use indium titanium oxide (ITO) and the speed of electrons we do not affect. Secondly, all such devices have glass thickness from 0.4 to 1.2-1.4 mm – imagine what will happen if you put all your weight on such a glass. In the world there is simply no sensor technology, which would be able to work through a glass more than 10 mm thick. Thirdly, it was necessary to develop a touchscreen that can work with many users at the same time: most touchscreens are limited to ten simultaneous touches. So I had a lot of technical challenges, which made me wrack my brains and think of something new.
As a result, a technology has been developed that has no analogues in the world. For example, a table that can recognize the shape of an object, "understand" that a phone or fork has been placed on the table, recognize the faces of those sitting and determine gender, etc. All tables run on Windows.

Project Payback
Three restaurants are already operating: one in Cyprus (Oshi), two more in Dubai and Abu Dhabi. Two of the restaurants, one in Cyprus and one in Dubai, have already fully recovered their investment, one in five months and the other in 11 months.
The investment in the Cypriot restaurant was 460, 000 euros, it paid for itself in 5.5 months and has been earning ever since. In Dubai – $970, 000, it paid for itself in 11 months. Where the profit comes from. First, a 32% increase in sales by trivially selling more food and drinks with the tables. Second, the savings in staffing. Normally, a restaurant for 100 seats needs 8-9 waiters, here – two. In Cyprus, the salary of a waiter – 1000 euros, respectively, the net savings only on wages will be 6-7 thousand.
If you take a restaurant’s turnover as 100%, the classic restaurant model is somewhere around 48% (food and beverage sales). Another 52% is advertising and everything associated with it. For example, a wine company wants to sell wine to steaks – and tables can be used as an e-commerce tool. Or Coca-Cola orders a broadcast from the World Cup with its logo, Adidas buys banners advertising sneakers, etc. If you take the world average, the margin "on food" for a classic restaurant is about 30%, here it’s 90.
Touch screen stands provide an atmospheric, wow effect that motivates a person to come back for more and bring their friends. It is possible to randomly change the images of the wall panels. This works very well for holidays. Imagine a wedding where the entire restaurant can be turned into a fairy tale with rose petals crumbling – with no need to spend on decor at all.
